Spinach Salad



I LOVE my spinach salad. During my weight-loss journey I have had to make multiple changes to the way that I eat food. Delighting in veggies was strange at first, but has become second nature.
Here’s what you’ll want to do:
Ingredients:

  • 1 bag baby spinach
  • 4T Raspberry vinaigrette (we like our food a little saucy, adjust to your preference)
  • 1/2C Cotija cheese (again, adjust as needed)
  • Some sliced strawberries (we tried raspberries but they were way too sour)
  • Lil salt ‘n peppa
Throw everything into a bowl and toss. Then enjoy! If you will be eating the salad later I would recommend omitting the dressing until you are ready to serve. The spinach tends to get a little limp.
Give it a go, you won't be disappointed!
